Work Experience
Four Seasons Catering & Events Management – Warwickshire, UK
(August 1999 – December 2000)
Four Seasons was an outside catering company which catered for functions and corporate events throughout the UK. Ranging from 100 persons for private parties to ascot race meetings and polo tournaments around Warwickshire and surrounding counties. My main duties were to bring together the teams needed; for the pacific functions, bring to life menus with the company and clients alike.
This job was very enjoyable as it gave me the freedom to show my own talents as well as working with the directors of the company also chefs. I finally left after the company was sold on and too many changes were taken in the wrong direction with new owners.
Intracs Middle East – Republic of Yemen
(June 2001 – September 2003)
I worked for Intracs for over 2 years as the Chef Manager for the Marib area district and looked after the various contracts. My duties varied in range of:
- Running the brigade of chef's through daily duties and training programs.
- Menu building
- Stock ordering
- Hygiene Control
- General everyday problems that occurred
I enjoyed the work as everyday threw me new challenges and increased my own knowledge of a wider range in catering operations. I left Intracs to pursue a new life in New Zealand and will always be grateful for my time spent in Yemen.
Reconstruction Assistance International FZCO – Sudan
(April 2007 – December 2007)
I worked for RAI as an Assistant Catering Manager for their camp in Juba and at the same time managed various contracts for different camp sites. My duties were:
- Running brigade of Chef's
- Menu building
- Stock ordering and maintaining
- Hygiene Control
- General problems that occurs everyday
My job was very flexible and wide. I have to visit 3 different camps for various contracts everyday to check if everything was operating properly. I also managed a bar called "The Village" where a nice delicatessen is found and the only Pizza bar you could find in the place.
I left RAI because the company kept on changing the management and had different policies every time the new managers arrive.
Voluntary and travel experience
I feel that through extensive travel and employment abroad it has enabled cultural understanding and experience. I have lived in rural villages and large town ships which have enabled me to encounter many walks of life. Whilst in the UK working in the equestrian world, I undertook voluntary work with disabled children for the RDA.
